I’ve talked briefly about flood icing before so i thought i’d show you a step-by-step photo-guide of my latest cookie.
The dragon tattoo cookie slab. These are big cookies, around 30cm!
Step 1
Bake yourself a thin cookie slab and leave it to cool completely

Step 2
Use an edible ink pen to sketch out your chosen design. Mine is based on a japanese dragon tattoo.

Step 3
use a 2 tip nozzle and a piping bag to pipe over your sketch with ‘toothpaste’ consistency royal icing and allow to dry for 24 hours.

Step 4
Colour up thinned royal icing and ‘flood’ inside the piped outline using your 2 or 3 tip nozzle and a piping bag. Flood to within a few millimeters of your outline and then use a toothpick to coax the icing to meet the outline. That avoids the risk of the flood icing escaping over your outline. Leave to dry completely.

Step 5
Once all the sections have been flooded and dried you can return to add any final piping details or hand-painted elements.
And there you have it, your very own hand baked, hand drawn and hand piped cookie slab!

I’m not sure what bland of edible pen i use, i’ll check it out later and email you. I just typed ‘edible icing pen’ into ebay and up it came.
