I dream in buttercream…..

Doesn’t it seem that these days cakes are all about fondant icing? You just have to look on flickr or pinterest and almost all of the ‘celebration cakes’ are covered and decorated in sugarpaste. Even on most of the modern ‘luxury’ cupcakes the buttercream is shamefully hidden under a cap of fondant icing!

Well recently I stumbled across a pair of ladies who are all about buttercream and I seriously love it. It’s a homage to a traditional tasty icing in all it’s glory and done right it’s quite simply beautiful. It does however involves some serious piping skills – and i really don’t have those. I decided I’d have to go on a quest to find them!

With that in mind what better place to learn than from the queens of buttecream themselves. I asked Valeri and Christina from Queen of Heart Couture Cakes to give me a mini-masterclass in butterceam flowers. I am fortunate enough that they accepted!

The buttery duo..

Well here is my first attempt, both using my new favourite baking tool, Petal tip 104! My first crack at buttercream flowers.

There will definitely be many more where these came from as I work on my piping skills and combine these into my cake/cookie designs.

Buttercream is having a revival, why not join the revolution?

    I’m not a fan of fondant either. It’s so sweet it almost makes your teeth curl. Buttercream all the way here.
