The technique of flood icing uses wet royal icing to decorate cookies which then dries into a hard, glossy, beautiul coating.
All you need is some royal icing and a piping bag! Simply pipe thicker royal icing onto a cookie to create a border or ‘dam’ around the edge, then allow thinner royal icing to flood the area inside the border.
You can either wait for the icing to set and add further fine piping details/edible pen work on top or you can dot/swirl/draw in other colours whilst the icing is still wet to create patterns and blends before the icing dries.
Why not make some vanilla cookies for your loved one this valentines and experiment with flood icing to add that personal touch.

Hi janet, you use flood icing. Its wet royal icing that you pipe onto the cookie. Then, whilst the icing is still wet you swirl in another colour using a toothpick or similar. The whole lot dries and you have your pattern set. Hope that makes sense.
