How to: Make a chocolate giant cupcake case

Giant cupcakes are all the rage right now. The moulds are easily and cheaply available on ebay or Amazon and in many high-street shops.

To make your giant cupcake extra special you can use the silicon mould to create a hand-made chocolate casing for it to sit in. This adds real gloss and flare to your finished cupcake.

Tip* Unless you can temper chocolate it is best to use Wilton candy melts. Wiltons candy melts are specially made chocolate ‘buttons’ designed for easy chocolate making. They come in lots of colours and different cocoa weights so give you loads of creative flexibilty. You can buy them on ebay or find them in most hobbycraft type shops.

Here’s how you make the chocolate mould:

1) Follow the instructions on the back of the Wiltons candy melts pack to melt the chocolate into a heatproof bowl. Be careful not to burn the chocolate, now is not the time to get distracted!

2) Take the base of the mould and paint the inside with the chocolate. Make sure you paint the melted chocolate into all the grooves so you avoid unsightly air bubbles or gaps in the finished case.

3) One you have painted the whole of the inside of the mould place it in the fridge for 30 minutes.

4) Once the chocolate has set repeat step 2 and paint a second layer of melted chocolate into the mould. This doubles the thickness and prevents any weak areas forming. Lift the mould up to the light and check there are no areas that look thin or that you can see the silicon mould through.

5) Place the mould back into the fridge for another 30 minutes or until the chocolate has completely set.

6) Once set gently begin to peel back the mould easing it away from the set chocolate. Work round the top of the mould in a circular motion pulling it away from the chocolate case.

7) Once you have completely peeled away your mould you will be left with your completed chocolate casing!

Use the mould to make your cake allowing it to cool properly before adding a layer of buttercream to the inside of the chocolate mould and popping the cake in. You’ll probably need to trim the edges of the cake with a sharp knife to fit into your amazing chocolate creation!

Add the top layer of the cake from your mould and decorate as desired.

Giant cupcakes are really popular at the moment as part of big cake/little cake wedding cakes. They usually sit proudly on the top tier with hundreds of small cupcakes placed on the lower tiers. The giant cupcake serves as something for the bride and groom to cut whilst still having all the individual cupcakes to give away to the guests!

These giant versions of the mini classic also make gorgeous and different birthday cakes either covered in colourful sprinkles and sugar dust for children or piped with elegant rose piped butter icing or ganache for a more grown up, sophisticated look.

Whatever your theme try adding a hand-made chocolate case to your giant cupcake. Its so simple and yet so effective!
